Jew-“ish” Recipe: Individual Oreo Cheesecakes

The Jewish holiday of Shavuot begins this evening. This joyous holiday commemorates the giving of the Torah! The tradition of eating dairy, especially cheesecake, during Shavuot is derived from both the dietary laws of kashrut that the Torah offers, as well as the symbolism of “the land flowing with milk and honey” promised to the Israelites.

Meet our CRC Chef – Brad Hartman

Brad says, “Nothing is as satisfying as cheesecake, and when you are in the mood for some, nothing else will do.” Chef Hartman possesses over 40 years of practical experience in the food industry. A 1985 graduate of the Culinary Institute of America, his eclectic culinary background is augmented by time spent in Europe and in the Middle East. Brad has been a working chef in Vail Colorado, New Jersey, Scottsdale Arizona, and New York City. For 14 years; he owned Pumpernickles deli/restaurant/catering in Creve Coeur. He was a Chef/Instructor at L’Ecole Culinaire for many years, teaching the next generation of chefs their trade. 

As Culinary Director of Senior Services Plus, he and his crew created and distributed 150,000 Meals on Wheels and 250,000 Head Start meals yearly in southern Illinois, as well as running a healthy and innovative cafe serving breakfast and lunch to seniors. Chef Hartman acted as Executive Chef of The Muny for the 2019 season. Brad currently edits recipes and cookbooks, experiments with the latest food trends especially Vegan adn Vegetarian cuisine and is the principal of his own Consulting company. He, his wife Margie Guller Hartman and children Noah and Koby are proud members of CRC.

Ingredients List:

Equipment: food processor (or) hand mixer, standard 4 oz. cupcake tins, rack of 12, & baking spray for pans 

Crust: 
Oreos – 1 ½ sleeves 
Butter – 2 oz. (½ stick), melted. (30 seconds in a microwave works well)

Cheesecake Mix: 
Cream cheese – 1 lb. (2 pkg.s), room temperature 
Granulated sugar – ¾ cup 
Eggs, large – 2 
Vanilla, good quality – 1 tsp. 

Topping: 
Sour cream – 1 cup 
Granulated sugar, ¼ cup
